The tapping of maple trees is a sure sign of spring here in Amish Country. There may still be plenty of snow this year, but the taps have been hammered in, and the buckets are filling up with sap. The sweet maple syrup that is rendered from this sap will be on the shelves all summer long. It amazes me still how much of it the tourists who travel through Holmes County will buy.
